    Apple Cider Chicken

    Pan-seared chicken breasts in a tangy apple cider vinegar sauce with rosemary.

    Ingredients

    • Nonstick olive oil spray
    • 1 lb boneless, skinless chicken breast
    • 1 tsp sea salt, divided
    • 1/2 tsp freshly ground black pepper, divided
    • 1/2 cup fresh apple cider vinegar
    • 1 tsp stevia or 1 dropper liquid stevia
    • 2 tsp Dijon or stoneground mustard
    • 3 medium firm gala apples, cored and cut into 1/2-inch slices (if fruit is allowed)
    • 2 teaspoons chopped fresh rosemary

    Instructions

      Heat olive oil spray in large non-stick skillet over medium high.

      Season chicken with salt and pepper.

      Cook chicken 4 minutes per side until cooked through. Remove and cover with foil.

      Add vinegar, stevia, mustard, and apples to skillet. Cook until apples are tender.

      Return chicken to pan. Sprinkle with rosemary and serve.
