Apple Ring Pancakes
Protein pancakes made with apple rings for a fun twist on breakfast.
Ingredients
- 1 apple
- 1/2 teaspoon cinnamon
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup cashew milk, unsweetened
- 1 scoop protein powder (vanilla)
- 2 teaspoons baking powder
- 1 pinch salt
- PHASE 2: 2 tsp. coconut oil or grass-fed butter
Instructions

Peel the apple and slice into 2 cm (3/4-inch) thickness.

Using a teaspoon, cut out the core of the apple and place apples in a medium bowl.

Mix in cinnamon and coat each apple ring.

In a large bowl mix egg, vanilla extract and cashew milk with a whisk. PHASE 2: Add coconut oil OR grass-fed butter to the bowl first.

Sift in protein powder, baking powder, cinnamon and salt and mix the batter.

Heat pan on medium heat and melt butter. Dunk each ring into the batter and place on pan.

Wait until bubbles form on the batter, then flip.
