Spicy Mexican Cauliflower Rice
A flavorful low-carb take on Mexican rice using cauliflower.
Instructions

Place the cauliflower florets in a food processor and pulse a few times until it is rice-like consistency.

Heat a large skillet over medium heat. Spray with olive oil and add onion. Cook until softened.

Add garlic, tomatoes, and chili pepper. Cook for 3-4 minutes.

Add the cauliflower rice, spices, and chicken stock. Stir well.

Cover and cook for 10-12 minutes until cauliflower is tender.

Stir in cilantro and lime juice. Season with salt and pepper.
