Stuffed Bell Pepper
Bell peppers stuffed with lean ground beef, cauliflower rice, and tomatoes for a satisfying low-carb meal.

Instructions

In a large sauce pan, bring 4-quarts of water to a boil. Add bell peppers and cook until peppers just begin to soften, about 3 minutes.

With a slotted spoon, remove bell peppers and place on a plate lined with kitchen towel or paper towels.

While peppers cook, heat olive oil spray in a large skillet over medium heat. Add onion and cook until soft.

Add ground beef and cook until browned, breaking up meat as it cooks.

Add garlic, tomatoes, cilantro, chili powder, cumin, and tomato paste. Stir to combine.

Stir in cauliflower rice and reserved tomato juice.

Stuff peppers with meat mixture and place in a baking dish.

Bake at 350F for 20-25 minutes.
