Turkey Meatball Veggie Soup
A hearty soup filled with turkey meatballs and fresh vegetables.

Instructions

Combine ground turkey, ground flaxseed, egg yolk, salt, pepper and dried parsley to make the meatballs.

Heat a large pot over medium-high heat and saute meatballs, flipping once. They should take about 5-8 minutes to cook.

Remove meatballs and set aside. Add broccoli, garlic to the pot and cook.

Add broth, seasonings, and simmer for 15-20 minutes.

Add meatballs back, then stir in arugula, spinach, and lemon juice before serving.
